Strawberry, coconut popsicles
We’ve had major coconut cravings in our house this summer. Coconut smoothies, shredded coconut on yogurt, and these coconut cookies. So, one hot day last week when I was trying to decide what to do to cool off my 12 month old, coconut popsicles seemed like the obvious choice. This sweet summer treat is light and refreshing and perfect for tiny tastebuds.

Ingredients:
  • Popsicle Freezer Mold, like this 
  • Strawberries
  • Frozen Coconut 
  • Coconut Water
  • Sweetener to taste, agave, honey, coconut sugar, maple syrup

    Directions:

    They’re easy to make. Just blend coconut water with strawberries for the red layers and coconut water with the frozen coconut for the white layers. Add in as much or as little sweetener as you’d like. Just keep in mind that the more dark-colored sweetener you add (like maple syrup) the color of the coconut layer will darken accordingly.
